Cola-Brined Fried Chicken

Our Executive Chef and Culinary Director, Chef Bex, has created the perfect pairing of the 2020 Club Exclusive Pinot Noir with a recipe that elevates a kitchen staple with a delicious and flavorful brine.

About the 2020 Club Exclusive Pinot Noir

This wine gives us the opportunity to share a small, rare blend with our Chehalem family. This Cuvée in particular is special because it is the first time we have blended two of our estate vineyards, Ridgecrest (58%) and Stoller (42%,) together. The natural aspects that make each site special and different are what ended up complementing and accentuating each other. Ridgecrest is planted on marine sedimentary soil and typically shows a bigger back bone with earthy and fispice notes. Something about Ridgecrest feels like it demands confidence and attention, whereas Stoller, which is planted on Jory soil, is softer and fruitier. I feel the Stoller fruit adds the whimsical character that harmonizes the wine.

Personally, I think this Pinot would pair perfectly sitting on a porch at a cabin on a river, listening to Beyoncé, but that’s just me. No need to cellar this bottle, I recommend drinking it now.
